Do digital watches also use quartz?

If you mean always use quartz then the answer is yes. The frequency of a quartz crystal is very accurate and less complicated than the jewels and gears used in some analog watches.

It is cheap and plentiful and the period of a quartz crystal is well known. There are other ways to do it but they rely on less reliable methods (capacitors and inductors for electric circuits) which can vary greatly. It is a cheap way of doing it also. There are other elements which has predictable vibrations (like cesium (the atomic clock material)) but the cost for such materials is prohibitive. When you are making 100 million watches and you want to make the most money the choice is between a cheap easily used common place crystal or an expensive one the choice is obvious.
I also cannot recall of any oscillators being made of other materials than quartz (probably has something to do with its semiconductor properties)
