How do I change my Canon digital SLR XTI to shoot black and white photos? ?

You have to put it in manual mode and chose “monochrome” on the menu!

You have a fine DSLR that takes wonderful RGB images.
Do what us pros do. Shoot in colour and then pick out the right image to convert to black and white and change it.
In Photoshop (I am going to assume that since you have such a fine camera, you also have a fine photo program)
* Use the saturation tool and set it to -100
* Save the new file as some other name ( I add BW to the original file name) so you do not overwrite your original file
* Using the level tool, set the black threshold, white threshold and mid-tone level.
This is how those amazing digital black and white images are made … not using the monochrome feature in the camera … this is perhaps the only post processing pros ever use except for perhaps processing RAW files, resizing images and appending XMP files.
NOTE: This works best if your monitor has been calibrated recently.

Like fhotoace says, shoot in colour and then convert to B&W. It’s easy to convert a colour photo to B&W but you can’t convert a B&W to colour. If you shoot in colour and then decide you want it B&W it’ll take two seconds to do. If you shoot in B&W and decide it would have looked great in colour then there’s nothing you can do.
Also, if you don’t have photoshop you should get Picasa by Google. It’s nowhere near as powerful as photoshop but it can convert to B&W and it’s free.
