Using Photoshop, you carefully select the subject, using the EXTRACT command (under filters). Once selected, copy and paste this onto a new background.
Apart from the extract tool, you could also select your subject, using the pen tool, making a mask, the colour range tool (under Select), the magic wand etc etc.
