decent slide film will have a gamut (colour range) in excess of a digital sensor, the colour depth is infinite whereas most digital SLRs sample at 14bit depth, film has a wider contrast & dynamic range than digital.
Digital cameras use a bayer patter (with the exception of the fuji foveon) which means that all the colour is taken from one layer of primary coloured photosites. This RGB method means that the camera is filling in some blanks to make up the picture, colour film has 3 layers, so there is a genuine colour recorded for each area of the film / subject.
35mm film can be scanned at 5400dpi on my scanner, giving a 40MP image. Films like Fuji Velvia F out resolve my scanner. When you then go to medium or large format you can have images in the hundreds of MPs if scanned properly.
So to answer your question, film is better for realistic colour, however digital is very very good these days, and the convenience factor may win out.
To get the best colour from your digital camera shoot in Adobe RGB (1998) colourspace (not sRGB) and shoot in RAW or TIFF mode, as these can usually be output as 16bit images, and are commonly upsampled from 12bit or 14bit source files, rather than the 8bit of JPEG.
Also take control of your white balance, learn how to use the presets and how to use the manual WB.
All of these steps will give you the best possible colour quality from a digital camera.
