Hook up my Xbox 360 to my TV using my Digital Converter Box?

It depends on what inputs your digital converter box has. If there is an input for composite(the yellow, white and red plugs), then it should work. (make sure it’s an input and not just output.) Just plug the Xbox’s cable into that. The Digital Converter should have an aux mode. Usually, it should be before the first channel. If not there may be an Input button on the box that will switch over to it.
If your box doesn’t have the necessary inputs, you can use an RF modulator.

You do not. The box has only A/V outputs. Its only input is antenna.
You instead need an RF modulator that has bypass, and connect that between the converter and TV.
